SIROCCO is not a random choice. In Greek and naval tradition sirokos or sorokos is the southeast wind, which blows from the Sahara desert and the Middle East. It is considered as strong wind, dry and hot. However, on our island and on our special volcanic beach of Paleochori, he arrives weakened, bringing a sweet warmth. It is ideal to accompany your meal on the beach, listening to the splash of the waves and flooding you with scents and aromas that highlight the uniqueness of Cycladic recipes.

It is widely known that Milos is a volcanic island. In Palaiochori, where we are located, the phenomenon of geothermal energy is strongly presented. Virtually throughout the beach we have strong heat sources that are expressed in temperatures up to 102 degrees Celsius. We use this natural energy source to cook various raw materials such as lamb, pork eggplant, potato and fish. When we talk about a temperature of about 100 degrees Celsius our mind is automatically led to the approach of boiling. But in this case things are a little more complicated.

The food buried in the sand receives the same temperature in all directions, creating an oven environment. Because it is exactly uniform from everywhere at the same time the raw material retains  its moisture. So we have a 100% juicy result that keeps the texture and the aroma unchanged at the same time.
