A Few Words
In the small mountain village Spoa, on the island Karpathos of the Aegean Sea, Mrs. Anthoula operates a traditional family Greek tavern since 1985. Although “Folia” is a tavern hidden in a remote area of the island, it is still a treasure of taste worth visiting. Through use of quality food “Folia” became a destination for every tourist that visits the island and a place to have good food for locals. Homegrown Artichoke salad and mountain picked Caper Salads are served and garnished with organic pure olive oil made from the family’s olive trees. Greek salads are made to order and topped with original goat cheese made by local farmers. Fava bean salad is served with olive oil and chopped onion from the garded. Everything in this tavern is made with care. The bread is baked twice a week in the village’s traditional brick and stone ovens. All fish, Karpathian shrimp, calamari are fresh, caught by Mrs. Anthoula’s husband, Mr. George and their son . The calamari is fried in a pan, whole not cut in strips, served only with lemon making it absolutely divine. The great taste of the sardines and the way they are prepared has created a well-known reputation. This is a small fish that is cooked and preserved only by the salt that it is carefully packed and stored in. The sardines are served with olive oil and wine vinegar, a delicacy that all the islanders enjoy along with a glass of ouzo or wine. In addition to all the made to order entrees Mrs. Anthoula also prepares daily fresh original Greek dishes. Customers can choose between, moussaka , lamp stiffado a traditional stew, baked stuffed tomatoes and peppers with rice and herbs, homemade Karpathian pasta “makarounes” and many more delicious dishes. When customers are finished with their meal, homemade fruit dessert “gliko koutaliou”, will be served on the house. For those who do visit “Folia” the memory of it will be pleasantly connected with that of the island of Karpathos as part of its traditions and its culture. Every day: 7:00-12:00
