A Few Words

Wine Restaurant Sphinx is located in Oia, Santorini, at an 1800’s preserved captain house, protected by the Ministry of Culture.

Chef and owner George Psychas has always been inspired by the Mediterranean cuisine. Through years though, he focused onto Greek cuisine, paying extra attention on products of Santorini and Aegean islands.

His love on natural Greek products, guided him to create his own organic farm and olive grove, where he cultivates the vegetables and herbs to be used in his kitchen. Fava beans, olives, extra virgin olive oil, herbs and honey used at the restaurant, come from his bio farm.

The wine list of Sphinx includes more than 350 labels of Greek and international wines. A special section is dedicated to all vineyards of Santorini, with wines of local producers. All wines are preserved in the restaurant’s underground walk-in cellar, under adequate ageing conditions.

His vision on international recognition of Aegean Cuisine, guides him on simple and essential presentation of his recipes, based on the uniqueness of the local tradition.
