A celebrity among cheeses, mainly because of its association with cosmopolitan Mykonos, although it is found throughout the Cyclades. Kopanisti is a soft, sharp, and spicy cheese with a pinkish color and has Protected Designation of Origin (PDO, in Greek P.O.P) status. On Naxos, this cheese is called tyrokafteri. Methods used for making kopanisti vary from island to island, but t is made from cow’s, ewe’s, or goat’s milk and natural rennet, strained in bags, and matured for months in clay pots or small barrels. More cheese is added as to the barrel or pot as it matures.
