Hard yellow cheese found throughout Greece, but with slight variations in flavor due to the taste and type of local vegetation for grazing. It’s one of he oldest Greek cheeses and is produced according to traditional cheesemaking methods using sheep’s or goat’s milk or a blend of these. Kefalotyri has Protected Designation of Origin (PDO, in Greek P.O.P) status. The kefalotyri produced on the islands varies slightly, albeit mainly in how it is matured and preserved.
