Christos Markozanes and Stavros Sigalas have created a pretty, split-level open-air restaurant at Oia that specializes in Mediterranean cuisine prepared used local ingredients aimed at highlighting what’s known as Creative Greek Cuisine. Special care is taken to preserve ingredients’ full flavors and aromas for dishes that pair well with local wines. A Few Words

Christos Markozanes and Stavros Sigalas have created in the traditional settlement of Oia, this beautiful outdoor courtyard dining area where they present dishes of the Mediterranean cuisine blended with the local products giving emphasis in what they call Creative Greek Cuisine.

Products such as the tiny volcanic tomatoes which have three or four times the natural aroma of any others, the dynamic earthiness of the island’s famous yellow lentils (fava) can never be equaled by legumes grown in irrigated fields. Sweet-smelling white-fleshed aubergines, delicious cucumbers, capers, white berries, small watermelons, figs, complement to the unique local produce of the Theran soil.

All these delectable raw materials, are combined with an extensive well chosen wine list. The superb location, the romantic ambience, the breathtaking view, the distinguished service – all come together to form the perfect setting for an unforgettable dinner.
