Soft, fresh cheese made from sheep’s or goat’s whey. “Anthotyro” has Protected Designation of Origin (PDO, in Greek P.O.P) status for cheese that is produced in specific regions of Greece in accordance using traditional cheese-making techniques and from either ewe’s whey or goat’s whey or a blend of the two; sheep’s milk, goat’s milk or their cream may be added.
